Sugar free white Christmas & rocky road

The perfect additions to any festive table! Experiment a little, throw in your favourite add ins and see if you can stop at only one piece… They’re sugar free and low carb so you don’t have to!

Rocky Road

MAKES: 20 pieces

INGREDIENTS

You will need

3 x packets of Noshu 98% Sugar Free Choc Baking Chips

15g coconut oil
40g shredded coconut
60g marshmallows, roughly chopped
50g gummy lollies (we used sugar free jellies), roughly chopped
50g peanuts, roughly chopped
50g macadamias, roughly chopped
50g dried cranberries, roughly chopped
30g rice bubbles

1 x 20cm square baking tin

METHOD

Spray your baking tin with non-stick cooking spray then line with baking paper, including the sides to avoid the rocky road sticking to the tin.

Place Noshu 98% Sugar Free Choc Baking Chips and coconut oil in a microwave proof bowl. Melt in the microwave in 30 second increments, stirring each time, until fully melted.

Combine shredded coconut, marshmallows, gummies, peanuts, macadamias, cranberries and rice bubbles into a large mixing bowl.

Pour your melted Noshu choc into the large bowl and mix until all the mix ins are fully coated in choc liquid.

Transfer your Rocky Road mixture into your prepared baking tin. Cover and set aside overnight, or until the mixture has fully solidified.

Cut into 20 squares and enjoy!

 

 

White Christmas

MAKES: 20 pieces

INGREDIENTS

3 x packets of Noshu 95% Sugar Free White Choc Baking Chips

15g coconut oil
40g shredded coconut
60g marshmallows, roughly chopped
50g pistachio nuts, shelled and unsalted
50g pepitas
50g goji berries, roughly chopped
65g dried cranberries, roughly chopped
30g rice bubbles

1 x 20cm square baking tin

METHOD

Spray your baking tin with non-stick cooking spray then line with baking paper, including the sides to avoid the rocky road sticking to the tin.

Place Noshu 95% Sugar Free White Choc Baking Chips and coconut oil in a microwave proof bowl. Melt in the microwave in 30 second increments, stirring each time, until fully melted.

Combine shredded coconut, marshmallows, pistachio nuts, pepitas, dried goji berries, dried cranberries, and rice bubbles into a large mixing bowl.

Transfer your White Christmas mixture into your prepared baking tin. Cover and set aside overnight, or until the mixture has fully solidified.
