MAKES: 1 x 6inch (15cm) round cake or 20cm square slab cake

You will need

1 packet Noshu 99% Sugar Free Cake Mix + Frosting Sachet (Chocolate or Vanilla)
1 x 6inch (15cm) round cake tin

For the cake

1 sachet Noshu 99% Sugar Free Cake Mix (Chocolate or Vanilla)
1 cup of water (or non-dairy milk of choice)
120 grams of melted Nuttelex Lite
6 tsp Orgran egg replacer

For the frosting

1 sachet Noshu 99% Sugar Free Frosting Mix (Chocolate or Vanilla)
70 g / 4 tbsp non-dairy spread

Preheat the oven to 170°C (160°C fan forced). Grease and line the base of your baking tin with baking paper.

Prepare your egg replacer by mixing 6 teaspoons of egg replacer with 3 tablespoons of water in a bowl until it forms a smooth white paste.

Combine the egg replacer paste with the cake mix, water, and melted Nuttelex Lite.

Beat with an electric mixer using the whisk attachment on medium speed for 2 minutes.

To make a one-layer standard sized cake, pour the batter into a 20 cm round cake tin and cover with foil, leaving room for the cake to rise in the centre.

Remove the foil cover after 50 minutes baking time, then cook for a further 10–15 minutes, or until a skewer comes out clean.

Note: Using smaller or larger tins will affect baking time.

Remove cake from tin and place on a wire cooling rack to cool completely before decorating.

To prepare frosting, add non-dairy spread to a medium mixing bowl and beat with an electric mixer on high speed for 2 minutes until pale and creamy.

Slowly add frosting mix, 1 tbsp at a time, beating on medium for a further 3–4 minutes until frosting is smooth and doubled in volume.

Spread frosting mix over the cooled cake and decorate as desired.

Serve at room temperature.

Keep chilled in an airtight container for up to 3 days, or freeze for up to 3 months.
