Let’s have some fun with cupcakes this Christmas! They’re so easy to dress up and are the perfect bite (or 2) sized treat for any occasion.

You will need

1 x packet of Noshu 99% Sugar Free Vanilla Velvet Cake Mix
1 x packet of Noshu 95% Sugar Free White Choc Baking Chips

3 x extra large eggs
1 cup (250 mls) milk or nut milk
120g (7 tbsp) nuttelex or butter

4 tbsp (70g) butter (room temp)
2 tbsp milk
Food colouring of choice

1 x Noshu 95% Sugar Free White Choc Baking Chips
Food colouring of choice
Coconut oil

Preheat the oven to 150°C.

In a mixing bowl, combine Noshu 99% Sugar Free Vanilla Velvet Cake Mix, milk (or nut milk), eggs and melted dairy-free spread (or melted butter).

Beat with an electric mixer using the whisk attachment on medium speed for 2 minutes.

Equally distribute your cake batter between 24 cupcake moulds and bake for 15–20 minutes or until a skewer comes out clean.

Set aside to cool completely before decorating.

Whip up the frosting by beating the butter in a large mixing bowl with an electric beater until pale and fluffy, then gradually add the Noshu 99% Sugar Free Vanilla Velvet Icing Mix and beat for a further 2 minutes. Add milk and beat on high for 3–4 minutes.

Decorate your cupcakes with the frosting using a piping bag for best results.

Melt Noshu 95% Sugar Free White Choc Baking Chips and stir in food colouring with a small amount of coconut oil to keep in a liquid form (you may need to add more oil depending on how much food colouring you add). If the mix becomes too solid and looks like it has seized, don’t panic, just add a little more oil and stir until it evens out.

Spread mixture out onto a baking tray lined with baking paper and allow it to set in the fridge. Once set, cut out the shapes you want and decorate the cupcakes.
