98% Sugar Free Choc Hazelnut Spread

MAKES: 1 cup

INGREDIENTS

You will need

1  x packet Noshu 98% Sugar Free Choc Baking Chips
1 x sachet Noshu Chocolate Frosting Mix (from Noshu 99% Sugar Free Rich Chocolate Cake Mix or Noshu 98% Sugar Free Chocolate Cupcake Mix)
High power blender or food processor

Ingredients

125 g hazelnuts (preferably skinned)
1 x packet Noshu 98% Sugar Free Choc Baking Chips
1 x sachet Noshu Chocolate Frosting Mix
3 x tbsp oil (sunflower, hazelnut or coconut)
2 x tsp vanilla essence
Pinch of salt

METHOD

Preheat oven to 145°C . Roast hazelnuts on a lined baking tray for 15 minutes, shaking the tray every 5 minutes to allow the nuts to bake evenly. If you are using hazelnuts with the skins on, rub them in a kitchen towel after roasting to remove the skin.

Place the Noshu 98% Sugar Free Choc Baking Chips and your choice of oil in a microwave safe bowl and melt in the microwave in 30 second increments, stirring each time. Set aside to cool slightly.

Place roasted hazelnuts into your blender (or food processor) and pulse on high power for 10 seconds. After this time the nuts would have formed a meal. Scrape down the sides of the blender and pulse for a further 10 seconds. The nut meal that you have made will start to come together slightly to form more of a paste. At this point, add your Noshu Chocolate Frosting Mix and blend for another 10 seconds.

Pour in your melted chocolate mix, vanilla and salt and continue blending until smooth (about 20-30 seconds).

STORE

Keep in an airtight container such as a glass mason jar for up to 2 weeks at room temperature or 3-4 weeks in the fridge. This spread will set over time, so depending on how you store it you may need to microwave so that it becomes pourable/spreadable again.
