There’s nothing better than the smell of fresh gingerbread wafting through your home. Imagine a soft, fluffy, aromatic piece of bread that’s perfect toasted with a little butter. This is Christmas!
Serves: 12 slices
You will need
1 x Noshu 98% Sugar Free Vanilla Velvet Cake Mix
1 x standard loaf tin (25cm x 10cm)
For the loaf
225 g Noshu 98% Sugar Free Vanilla Velvet Cake Mix
1 tbsp cinnamon
1 1/2 tsp ground ginger
1 1/2 tsp allspice
2 x extra-large eggs
1/4 cup manuka honey or molasses (or you can omit entirely)
1/2 cup water
Note: We recommend adding the spices to taste in case you don’t like strong cinnamon or ginger flavours. This recipe is quite flavourful so feel free to tone it down as needed.
Preheat oven to 160°C (150°C fan forced) and spray your loaf tin with a little oil.
Place eggs, honey, and water in a large bowl and mix with an electric mixer on medium speed until frothy and light yellow.
In a separate bowl, combine cake mix, cinnamon, ground ginger and allspice with a wooden spoon. Add the wet mixture to the dry mixture and mix with an electric mixer on medium speed until smooth. Pour into 1 standard loaf tin, or into 6 tiny loaf tins.
Bake in preheated oven for 13 minutes. You will know your loaf is ready when a skewer inserted in the centre comes out clean. Remove from the oven and place on a wire cooling rack.
Slice and serve as is, or toast and spread with butter.
