Festive whoopie pies

It’s the festive season and who doesn’t like to indulge a little… We’ve recreated a few seasonal favs, sugar free of course, so you can entertain with the ‘WOW’ factor but without the sugar overload.

SERVES: 12

INGREDIENTS

You will need

1 x packet of Noshu 99% Sugar Free Rich Chocolate Cake Mix
2 x packets of  Noshu 95% Sugar Free White Choc Baking Chips

Cakes

1 x packet of Noshu 99% Sugar Free Rich Chocolate Cake Mix
180g butter
2 eggs
2 tbsp (40g) Milk

Frosting

1 x packet of Noshu 99% Sugar Free Rich Chocolate Frosting Mix
4 tbsp butter or Nuttelex
2 tbsp milk

Decorations

Red and green food colouring of choice
Coconut oil

METHOD

Cakes

Preheat oven to 140°C. Line three flat baking trays with baking paper.

Place Noshu 99% Sugar Free Rich Chocolate Cake Mix, butter, eggs and milk into a large stand mixer with paddle attachment and mix on the lowest speed to combine all ingredients.

Beat at a low to medium speed for 1 minute until the batter becomes a slightly paler colour and a smooth texture. Take the bowl off the mixer and scrape down the sides of the bowl with a spatula.

Measure out 12 even balls of mixture using an icecream scoop, then place evenly spaced over two prepared baking sheets. Lightly flatten the tops of the cake balls with your finger.

Bake in pre-heated oven for 17 minutes. Once baked, remove from oven and let cool on the tray until completely cool.

Decorations

While the cakes are cooling, prepare decorations by melting 100g of Noshu 95% Sugar Free White Choc Baking Chips with a teaspoon of coconut oil and a few drops of green food colouring (you may need more coconut oil depending on what food colouring you use).

Spread your green choc mixture over one half of your prepared baking tray and let partially set before cutting out leaf shapes. Once cut, let fully set in the fridge.

Melt 50g of Noshu 95% Sugar Free White Choc Baking Chips with a teaspoon of coconut oil and a few drops of red food colouring (you may need more coconut oil depending on what food colouring you use).

Spread your red choc mixture over the other half of your prepared baking tray and let partially set before cutting out small circle shapes. Once cut, let fully set in the fridge. You can also roll these into small balls once partially set if preferred. Once complete, let all decorations fully set in the fridge.

Frosting

Whip up the frosting by beating the butter in a large mixing bowl with an electric beater until pale and fluffy, then gradually add the Noshu 99% Sugar Free Rich Chocolate Icing Mix and beat for a further 2 minutes. Add milk and beat on high for 3–4 minutes.

Finish

Sandwich two layers of cake together with a generous layer of frosting and decorate the top with a blob of melted Noshu 95% Sugar Free White Choc Baking Chips. Place your ready-made festive choc decorations on top and enjoy!
