Choc chip skillet cookie

The most epic and delicious skillet cookie you will ever meet! This cookie has double the fun with white and milk choc chips…. and what’s better is that it’s wheat free and 98% sugar free. What’s not to love?

INGREDIENTS

You will need

1 box Noshu 98% Sugar Free Choc Chip Cookie Mix
1 box Noshu 98% White Choc Vanilla Cookie Mix
Skillet

For the cookie

1 box Noshu 98% Sugar Free Choc Chip Cookie Mix
1 box Noshu 98% White Choc Vanilla Cookie Mix
6 tbsp butter (90 g)

Or, for a non-dairy biscuit option replace butter with: 

6 tbsp Nuttelex (90 g)

 

METHOD

Preheat oven to 160°C (150°C fan forced). Grease skillet pan with butter or Nuttelex.

MIX
In a large mixing bowl, empty both packets of cookie mix. Add in melted butter (or melted Nuttelex) and 2 tbsp water (40 ml). Mix until combined with a fork or spatula.

Using your hands, work the mixture until it comes together to form a smooth cookie dough.

Press the dough evenly into your greased skillet pan.

BAKE
Bake for 30 minutes in the oven until golden brown on top. Carefully slice into eight portions making sure not to touch the hot skillet.

STORE
Best served hot out of the oven with a scoop of ice-cream.

Store in an airtight container for up to 3 weeks.
